5th meeting of the cooking course 'Poguojki: Food Made with Love'. Cooking is memory, identity, and sharing.

With this in mind, the Invito Association, together with the Nediške Doline Pro Loco, invites you to participate in the new cycle of cooking courses ‘Poguojki: food made with love’, dedicated to the rediscovery of culinary traditions as a factor of identity. Theme of the evening: A tale of spring - two Caterines among herbs, history and taste.

Surrounded by the foothills of the Alps and nestled among green vineyards, the Casale Don Giovanni is a renovated farmhouse that has maintained the typical characteristics of a rural home from times gone by. Its kitchen, furnished with period pieces and traditional objects, will be the backdrop for an evening dedicated to the flavours of spring.

The dishes we will prepare together are: Fancel with spring herbs, accompanied by traditional salami Crostini with Manig ricotta and wild garlic cream Župa uzgana with feverfew, a soup that tells of the deep bond with wild herbs Fancel with apples The protagonists of the kitchen: Since 2007, Caterina Dugaro and her family have been running the Casa delle Rondini holiday farm, located in the hamlet of Dughe di Stregna.

Her cooking is a tribute to tradition, offering dishes that we often don't have time to prepare at home. On the farm they raise beef cattle and pigs for the production of cured meats and sausages, as well as growing fruit and vegetables, guaranteeing genuine, high quality ingredients. Caterina Cossio is passionate about home cooking, and has transformed her love of food into a real mission.

Her dream, shared with her husband Alberto Scribano, a winemaker in Prepotto, came true in 2015 with the opening of the Agriturismo Scribano, a place where guests are welcomed into an authentic family environment. Here, in addition to offering wholesome dishes linked to the tradition of a border cuisine, he transmits the values of the territory and rural roots, creating a food and wine experience that goes beyond a simple meal.

The dishes will be accompanied by wines from the Azienda Agricola Scribano, presented by the producer, Alberto Scribano, who will illustrate the characteristics of his wines and guide participants in discovering the best combinations with the prepared dishes. During the evening there will also be a tasting of Malon preserves, a variety of pumpkin with white flesh, traditionally cultivated in the Natisone Valleys and recognised as a Slow Food Presidium.

We look forward to seeing you at a meeting where spring herbs are not just ingredients, but an expression of ancient knowledge linked to these places.

Through cooking, we will rediscover practices, gestures and flavours that are part of the cultural identity of the territory, in line with the spirit of ‘Poguojki: food made with love’. An opportunity to understand how food transmits memory and continuity between past and present.
