Fermentarium: Making a Mobile Beer Brewery

As part of Fermentarium: a set of fermentation workshops, this time we will carry out workshops for the production of a mobile beer brewhouse for home use.

As part of the Laboratory for the Future of Food - Bio/n at Xcenter, we also experiment with bacteria that allow us to ferment various foods and beverages. Beer, which was brewed by man in Mesopotamia and Egypt as early as 13,000 years ago, was introduced at October workshops, and in November and December, in addition to brewing beer, we will also produce a mobile beer brewery. With the modular welding machine, we want to equip the laboratory in such a way that it will be available to users from the local community along with its knowledge. In addition to teaching locals, we also want to host the mobile brewery at other locations, where we would introduce and motivate workshop participants with the popular drink for a wider use of fermentation processes, which enables healthy and ecologically sustainable eating. The goal of brewing is not to establish a beer fraternity, but to connect a community of researchers and experimenters interested in how to process food into healthier and more environmentally friendly food by cooking without fire.

Nov. 21, 2024, 5–8 p.m.

Fermentarium: Brewing 1/3: We will resume the process of brewing beer and flavor formation. We will compare the equipment we use with the industrial one and design our own set of tanks, heaters, valves and pumps, from which we will make a plan of the welding shop. At this workshop, we will also test the vessels from which we will assemble the welding machine and make sure with our own hands whether there will be any bread or beer from this flour.

Dec. 5, 2024, 5–8 p.m.

Fermentarium: Brewing 2/3: Most likely, the brewing from the first meeting will be successful, so the first part of the workshop will be dedicated to bottling our brew. The next step in the development of the welding machine will be to make an electronic controller with which we will be able to more closely monitor and control the fermentation processes during the brewing of wort, as well as during the fortnightly fermentation. In this workshop, some soldering will be required to a pre-made printed circuit board that has already become the core of all the devices we live with. The 21st century requires some electronic literacy from us as well!

Dec. 19, 2024, 5–8 p.m.

Fermentarium: Brewing 3/3: At this meeting, we will be turning stainless vessels over and connecting them to each other with pumps for dispensing wort. We will be carrying out this joy in the adjacent workshop, which is equipped with completely different hardware than our Laboratory for the Future of Food. On the malt brewing vessel we will mount the already manufactured electronic interface for temperature control and also test it. While the gauge is being tested, we will make a plan for the modular construction of the brewing plant and thus complete the group part of the brewing process.
