The GO! Pasta project celebrates the rich culinary heritage of Alto Friuli and the Goriška region, shining a spotlight on the tradition of stuffed pasta with specialties like cjarsons, Idrijski žlikrofi, Bovški krafi, and Kobariški štruklji.
By mapping local traditions, hosting events, and traveling with a mobile food trailer, the project fosters cultural exchange and strengthens international collaboration. It brings together producers, chefs, culinary schools, public institutions, and food lovers to bridge the two regions and highlight their unique flavors.
The goal of GO! Pasta is to develop new dishes for GO! 2025, contributing to a borderless, multicultural gastronomic experience within the European Capital of Culture.
