Presentation of the Laboratory for the Future of Food – Bio/n

We are opening the doors of the Laboratory for the Future of Food – Bio/n: in the past two years, it has hosted numerous public workshops on the topics of fermentation, alternative proteins and mushroom cultivation, and has encouraged the creation of a community engaged in brewing, kombucha production and tinctures for home pharmacy. 

The lab has worked with local inventors and industrial innovators to develop customised lab equipment: mushroom growth chambers, a lyophiliser for personal use, a DIY portable brewery, a green wall with a robotic spider—all this equipment will serve the lab's community in further research. Exhibitions have been organised by authors working on a holistic understanding of living systems such as fungi and their response to human impacts in the environment, satellite sensing of land cover change and geopolitical changes in land mapping, and the creation of a collaborative internet platform for local food producers.

In 2025, Xcenter Gallery aims to bring inspiring artworks by national and internationally renowned artists that focus on the complex interplay of technology and living organisms. In addition to workshops, presentations and exhibitions, behind the scenes, they are developing practical protocols on everything we have learned in the lab. Through research into the history of agriculture, viticulture and culinary traditions of the two Gorizias on both sides of the border, they map out possible guidelines for the sustainable development of high-quality food.

The Bio/on staff will talk more about all this at the lab open day, which will take place on Saturday 8 February 2025 at 14:00 and on Sunday 9 February at 10:00.
