SCOBY from the Past to the Future (workshop)

You are warmly invited to an interactive workshop, where we will explore the hidden world of fermentation through deep feeling and playful experimentation. 

We will learn about bacterial cellulose, which is produced in the fermentation process with a Symbiotic Culture of Bacteria and Yeast (SCOBY) and is traditionally used as a starter culture for the production of bubble aromatic tea—kombucha. In the first part, we will focus on using our senses, tasting, smelling, observing and touching the cellulose. We will delve into the biological processes, looking at how they affect the properties of the fermented products and how they influence the life of the bacteria and yeasts that produce them. Next, we will investigate microbial life using experimental methods: we will isolate samples of different stages of fermentation and look at them under a microscope. Throughout the whole process we will be discussing the ecological importance of SCOBY, its historical relationship with humans, its current and potential applications in medicine, health, culinary, design, art, technology and teaching. We will critically examine the human relationship with biological processes and other types of organisms that indispensably support the well-being of human society and enable its functioning.

No prior knowledge is required, we will learn everything together!

Nastja Ambrožič is an intermedia artist, pedagogue and experienced mentor who creates playful and interactive workshops for children, adolescents and adults. She explores the intersection of art, biology, ecology and technology, and is interested in everything human, biomaterials and wearable technologies through ecofeminist approaches, and incorporates sustainable thinking into workshops—from biohackathons to connecting with the natural environment, creating wearable electronic devices and programming living systems. Participants are encouraged to explore new ideas through play and experimentation, develop curiosity, critical thinking, and the audacity to test the unknown.

Eva Debevc is a biologist specializing in molecular biology and physiology. As a researcher, artist, and mentor of the method of modern science, she is committed to artistic exploration and creation. She is interested in living corporeality in the grip of scientific technologies and in the critique of scientific rationalism through myths of liveness and the performativity of magical practices.
